A legend reports that Arab women, abandoned following the defeat at the Battle of Poitiers, would have taught the inhabitants of the region to make this cheese before the 8th century.
Based on the old French word "maure" which means "black", this goat cheese is salty and ashy on the surface and creamy and melting texture becomes drier and more brittle.It's balanced flavor is tangy and nutty when young, becoming more capric and full-bodied over time
