From the Center, this cheese is one of the only pasteurized goat cheese and hard cheese. It is part of the tommes family. It is a traditional and ancestral product, the production of tomme developed in the 17th century in Savoie and Haute-Savoie.

Its paste is very white, dense, firm and has a few small holes. Its taste is a little sweet, fresh, delicate with nutty aromas. It has a rather mild goat flavor.
