From the Tarn department in the Occitanie region. Bouyguette is a soft goat's milk cheese with a natural rind. It has an elongated shape, called a "shuttle", and is molded by hand in a cloth. After the curd has drained for at least 24 hours, the cheese will imprint the folds of the fabric on its surface.
Adorned with a sprig of rosemary representative of the garrigue and its region, this smooth and creamy cheese melts in the mouth. It gives off lactic aromas, slightly goat and herbaceous, such as thyme and rosemary.
Suggested Pairing: Pouilly Fumé, or white beer.
